One of the major producers of tea in China, Fujian is home to Oolong tea (Tie Kuanyin can supposedly be traced back to single plant from Anxi County), Lapsang Souchong, Wuyi and Silver Yen Zhen Pearls. Additionally, the modern tea processing techniques for Oolong, White and Black tea were developed in Fujian. Three famous “red teas” from Fujian are Tanyang Gongfu, Zhenghe Gongfu, and Bailin Gongfu. My favorite Fujian tea is Quilan Oolong from Mt. Wuyi.
